Happiness is...

...a 3# box of Cream cheese!

So, I made some Cheesecake ice cream! =)

Cream Cheese Ice Cream

8 oz cream cheese, softened
2 eggs (If you have a good source for eggs, ie: you know how old they are, and how they handle the eggs.)
2 teaspoon vanilla
1/8 teaspoon salt (I like to use popcorn salt, so I use half the amount)
1/4 teaspoon stevia (or 1/4 cup sugar stuff)
1/4 cup sugar or Xylitol
Beat until smooth, and then continue beating while carefully adding:
2 cups of cream or half & half

Freeze it any way you like.
I have done the pull it out and stir it before, works okay. We have one of those little 1 qt. hand-crank ice cream freezers kind of like this one:

Serving suggestions:
Top with fresh fruit or jam/jelly or chocolate. Maybe serve graham crackers....
