Sugar (or Sugar-free) Spiced Almonds

(You could use what ever kind of nuts I think...)

First, put 3& 1/2 to 4 cups raw Almonds in a single layer on a baking sheet in a cold oven. Turn to 300, and then take them out in about 10 minuets. (they will be toasted)

Now turn the heat up to 325.

In a small bowl mix together:

1 tea. Cinnamon

1/2 tea. Cloves

1/2 tea. Nutmeg

1/2 tea. salt

1/4 tea. Black Pepper

1/4 cup Xylitol or Sugar (if you use Xylitol they stay sticky- never get hard)

Beat an egg white to a fine, thick/stiff foam in a reasonable sized bowl.

Stir in the dry ingredients, then add the almonds- stir to coat.

Spray or grease the pan well and then dump & spread the coated nuts evenly on the pan.

Put them in the oven, stir approx. every 7min. about 14 to 20 min. total.

Cool as long as you can stand! =)
