Baking Thursday~ 1940's

This time I made my Mom's Aunt's Zucchini Bread recipe, I tippled it (It made 5 4x8 loaves). And the changes I made are as follows:
4 cups of grated organic Carrot, a 20 oz can of Crushed Pineapple, 4 1/2 cups Sugar, 3 cups White Flour, 3 cups Wheat Flour, and 3 cups Oat Flour, and I only used about 1/4 c nuts~that's all I had! It turned out much better than last time (last time it was too dry). Next time I would cut another 1/2 cup of sugar and use 1 cup of nuts! =)

The addition of pineapple sounds intriguing. I guess that's what did it, wasn't it?

Yes, Hana Marmota~ the pineapple really made it! FYI: For some reason, I can never comment on your blog posts... =( ...that's so sad...
