Q: Can I eat Cake while on the GAPS diet? A: YES!

The Cake:

~Sprouted Sunflower seeds, ground into 'nut butter'

~Soaked ground Almonds

~Baked & mashed Butternut squash

~Eggs ~Ghee ~Salt

Process until fairly smooth, and a porridge-like consistency,

and pour into a very well greased pan- I used about 1/16th to 1/8th inch thick ghee.

Bake in a 300 oven, for 1 hour, or till a knife inserted in the middle comes out clean.

(Mom made the cake, and I made the frosting!)

The Frosting:

A lot of Ghee

About 1/2 tea. Honey

About 1 1/2 tea. Cinnamon

Mix well (you may have to pop it in the fridge to firm it up a bit),

and top each serving of cake as you eat it!

I wrapped the extra cake up individually, and kept it in the fridge, it is pretty sturdy when cold.

I've been thinking...

...If I want something more than I want God's will (or his timing), it is a sin.
Even if what I want or think I need is a good thing.
It's saying that God does not know what is best for me and my life right now.

But God cares for the sparrows- How much more does he care for me?!
(At least the same amount, if not more!)

We only played one game- "Name Rachel & Jack's first Baby" It went over very well!

That night:

Mom said: "Did you tell Sarah (H.H.) what your weight was down to?"
I said: "No, I did not think she would really want to know." =)

But I guess that is something you have to decide-
do you want to be skinny & single, or kind of round and married?

Today, I would have to say that they both sound nice...but I am tired, and being single is good. =)

....I had fun but, Sarah's baby on top of hosting the party for Rachel this afternoon...I am worn out....
So after cleaning up and dinner, we watched "The Prince & Me". With a clearplay filter of course!
(Mom wondered after if it was a bad choice, and I said no, that movie is a fairy tale...not at all real.)

Oatmeal Cookies for Dad....


This recipe is from the "Joy of Cooking" cookbook.
But it is posted here with my tweaking.
~*~
Preheat the oven to 350 and get the butter and eggs out of the refrigerator to come to room temperature.
Whisk together in a bowl:
1 3/4 c Flour
3/4 t Baking soda
3/4 t Baking powder
3/4 t Salt
1/2 t Cinnamon and 1/2 t Nutmeg (this time I used 1tea each- a cross between spice cookies & oatmeal cookies)

In another bowl, beat until well blended:
1 stick of Butter AND 3 1/2 oz (1/2 c) Coconut oil--melted
1 c Sucanat (or brown sugar) (...You can put in an extra 1/2 cup of sugar, but we did not think that they needed that...)
2 Eggs
2 1/2 t Vanilla and 1/4 t of Butter flavoring
Stir flour mixture into butter mixture until smooth.
Add 3 1/2 c old fashioned rolled oats,
and 1/2 c pecans
Scoop tablespoons-full of cookies onto a greased baking sheet, space them 2 inches apart, pat them so they are flatter, and bake for 6-9 minutes, rotating the pan for even browning.

I had a fun evening- got to spend some time with my girl friends down the street! We watched the old "Cheaper By The Dozen", and talked. Talked about our lives. Hopes. Dreams. "Mr. Right". Rachel & Jack. Sewing. Clothes shopping. Goodwill stores. Friends. Brothers. Gossip. We did not gossip- we talked about the subject of gossiping. Just life. Small things that mean a lot.

Another thing that happened earlier today, is that I found a nice black skirt. I have been looking for one for a while now.... you know- not too fancy and not too casual, not too short, and not too long. We walked into the Greenville Goodwill, and there it was- the first one I pulled off the rack! =)

I do hope that it will be the perfect black skirt, and last for ever! The only draw back is that it is hand wash only. Oh well- you can't win them all!
